I read about the origins of the word in the Wikipedia (of French, which in turn is derived from Porugese). However, as I had to do with baked quince with honey, it does not mean the origin or the reason why we say, "Raspberry Jam" instead of "raspberry jam.

Jam refers to the preservation of citrus fruits, is one of the quinces. The jam is made of any other citrus fruits.
Marmalade: A clear, jelly-like from the pulp and peel of fruits, especially citrus fruits to preserve.
Jam: A reserve of whole fruit boiled to a pulp with sugar. The use of the words is like any other in the English language, which is developing the ways. Raspberry jam is not jam because they do not contain any citrus fruit or bark.
